When you have little ones, macaroni and cheese just becomes a regular part of your life. I enjoy the chance to embrace a childhood favorite most of the time. But after 8 years of being a parent, it’s time to expand my cheesy pasta recipe repertoire.
Ingredients
Serves: 8
- 1 16-ounce box elbow macaroni, penne, or rotini
- 16 ounces ground sirloin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 cup ketchup
- 2 tablespoons yellow mustard
- 1 tablespoon unsalted butter
- 1 tablespoon all-purpose flour
- 1 cup 2% milk
- 2 cups shredded cheddar cheese
- 1 cup butternut squash or pumpkin puree
- 2 medium-size tomatoes, cored and thinly sliced
- 2 tablespoons panko bread crumbs
