Chickpea Curry-Stuffed Sweet Potatoes

Classic Indian ingredients like ginger, curry powder, coconut milk and cilantro combine in this tasty tater topper. Vegetarian or not, your family members will enjoy this hearty meat-free meal.

Ingredients
  • 4 sweet potatoes (about 2 1/2 pounds total), scrubbed
  • 4 teaspoons canola oil
  • 1 tablespoon minced garlic
  • 2 teaspoons minced ginger
  • 4 teaspoons curry powder
  • 1 14.5-ounce can no-salt-added tomatoes
  • 1 cup light coconut milk
  • 1 tablespoon brown sugar
  • 1 tablespoon apple cider vinegar
  • 1/2 teaspoon salt
  • 6 cups loosely packed baby spinach
  • 1 15.5-ounce can chickpeas, rinsed and drained
  • 1/4 cup roughly chopped cilantro, plus leaves (optional)
