Gluten-free chicken pie with ham, leeks, and a cheesy crust

“You'd never know this shortcrust pastry is gluten-free - the cheese and egg help bind the 
flour for the perfect texture ” 

Ingredients

  • 4 large chicken legs, bone in , (about 1kg total weight)
  • 3 large leeks , dark green tops cut off and reserved, the rest sliced into 1cm rounds
  • 1/4 teaspoon peppercorns
  • 1 bay leaf
  • 2 tablespoons olive oil
  • 2 sprigs of thyme , leaves picked
  • 90 g cooked ham , shredded
  • 200 ml crème fraîche , reserving 2 tbsp for the pastry
  • 4 teaspoons gluten-free cornflour
  •  
    For the pastry:
  • 400 g gluten-free plain flour , plus extra for dusting
  • 1 teaspoon gluten-free xanthan gum
  • 1 teaspoon salt
  • 50 g mature cheddar , grated
  • 200 g butter , chilled and cut into cubes
  • 1 large free range egg
  • 2 tablespoons gluten-free wholegrain mustard
  • 2 tablespoons crème fraîche
  • 1 large free range egg yolk , beaten with 1 tablespoon of water, to glaze
